After 6 to 7 hours of dehydration, you should check on the jerky frequently. When it looks firm and dry, it’s done. Be sure to check that the color is burgundy-brownish. The ideal beef jerky should bend so that it cracks just a bit, but the jerky should not snap in half.
Beef jerky can be stored in sealed containers to maintain the taste and texture, but you could also keep them in zipped up plastic bags at room temperature. They remain fresh and tasty for many days or even weeks afterwards!
